  • Thai Curry with Squash

    Not sure if this is totally Primal (I just started the program), but I am a pretty good cook and love experimenting. Here goes

    2 Cups Butternut squash 1/2 inch cubes

    1 cup carrots 1/2 inch cubes

    1 cup chopped onions

    1 cup green beans cut 1/2 inch

    1/2 cup veggie broth (or water or rice wine)

    1/4 cup Raw Thai Curry paste

    1 14 ounce can Coconut milk

    2 TBLSP fish sauce

    EV coconut oil

    Heat Coconut oil

    Add veggies

    Saute for 5 minutes

    Add veggie broth, cover and reduce heat to med-low.

    Cook for 5 minutes covered

    Add paste and mix completely until the paste has been integrated. Add the coconut milk and fish sauce. Cover and simmer on low for 20 minutes.

    I had this with a steak on the side but you can easily add some chicken thighs or breasts to the mix and have an all in one stew.

      I happened to throw some leftover squash in with my tandoori curry last night and it tasted great! Might try it with a thai twist.

        It really was good. I love any curry (Indian, Thai, Indonesian). I am a spicy food junky and like anything hot. I didn't mention that I also tossed in some slivered Thai Chili peppers to kick it up a bit.

        I wasn't sure about the green beans though. Are they OK with the Primal Blueprint? I know beans aren't...just curious.

          I believe green beans fall in the dark gray area--they are technically a legume, but they can be eaten raw. Some people put them on the "no" list, some will eat them. I'd say proceed with caution and watch closely for how they make you feel.
