Not sure if this is totally Primal (I just started the program), but I am a pretty good cook and love experimenting. Here goes
2 Cups Butternut squash 1/2 inch cubes
1 cup carrots 1/2 inch cubes
1 cup chopped onions
1 cup green beans cut 1/2 inch
1/2 cup veggie broth (or water or rice wine)
1/4 cup Raw Thai Curry paste
1 14 ounce can Coconut milk
2 TBLSP fish sauce
EV coconut oil
Heat Coconut oil
Saute for 5 minutes
Add veggie broth, cover and reduce heat to med-low.
Cook for 5 minutes covered
Add paste and mix completely until the paste has been integrated. Add the coconut milk and fish sauce. Cover and simmer on low for 20 minutes.
I had this with a steak on the side but you can easily add some chicken thighs or breasts to the mix and have an all in one stew.
