  • Lemon Gremolata Salad Dressing

    I've been posting recipes today because I've been going through a notebook that I've had for years where I've cut out recipes from the food section of the Houston Chronicle. I think I've found more good recipes there than any cookbook I have or website I've visited. So my little notebook is my favorite cookbook.

    Anyway, I've had this recipe for a while and just made it and it's delicious. I think it's a perfect summer salad dressing. I'm still on a quest for the perfect vinaigrette, as I can no longer have my favorite La Martinique True French Vinaigrette because it has the evil cottonseed oil in it. I've entertained notions of freezing it and scooping off the oil when it hardens and replacing with EVOO, but I've decided to challenge myself and try different homemade salad dressings.

    Lemon Gremolata Salad Dressing

    1/4 cup fresh chopped parsley
    1 tsp. grated lemon peel (zest)
    1/4 tsp. minced garlic
    2 TBSP fresh lemon juice
    2 TBSP EVOO
    2 tsp. Dijon mustard
    1 tsp. salt
    1/4 tsp. black pepper
    1/4 tsp. sugar (or your favorite substitute--personally, I'm not too freaked about the small amount of sugar in this)

    Whisk all ingredients together. That's it!
