  • Pineapple-Basil Pesto!

    I have a basil plant that is practically throwing leaves at me, so a major harvest was in order. Here's something I came up with to use some of it.

    I didn't measure the ingredients, I just used what I had on hand and adjusted according to taste.

    Handful of fresh basil leaves
    a couple cloves of garlic
    handful of pinenuts
    a large drizzle of olive oil
    small handful of shaved parmesan (optional)
    fresh pineapple
    sea salt & black pepper

    Throw everything into a food processor and give it a whirl! We've used it on top of burgers, pork chops and chicken, so far. It's mighty tasty... there will definitely be a jar of it in the fridge all summer long!

    I need your basil plant to come over and teach my basil plant how to behave.

    This sounds great...though, of course, my mind is thinking, "Pineapple Basil Sorbet?"
