    Depends which ice cream recipe you want. I've done mint chocolate chip, strawberry, almond nut butter, cheesecake and right now I have a coffee ice cream custard in my fridge marinating in all the beans to get it nice and strong. Pick your poison.

          Haha ok I'll start with the cheesecake one.

          Take a bar of cream cheese and leave it out til soft. Whip it with an electric mixer with 1 whole egg, 1 tablespoon of vanilla extract and 1/8 cup lemon juice.

          Heat a can of coconut oil until it is just about to simmer. In a separate bowl, whisk together 5 whole eggs til scrambled. If you don't want the rum flavor, use vodka. It'll be tasteless and you'll never know it's there. Personally, I like the rum flavor.

          That's it. Now just churn the ice cream according to the manufacturer's directions.

          I think next time I'm going to bake an almond meal crust - a cup of almond meal and half a stick of melted butter, press into a pan and baked til golden brown. Then, I'll crumble the crust into the ice cream kind of like chunks of graham cracker. That could be really good.

          Oh, don't forget the chocolate sauce. So easy.

          Heat 1 1/4 cups of water on the stove. While the water heats up, add 1 cup of Hershey's Special Dark cocoa powder and whisk until it begins to simmer. Simmer, whisking the whole time, until desired thickness. It only takes a few minutes. You have to whisk the whole time or you'll have burnt chocolate stuck to the bottom of the pot. After thickened, remove from heat and add stevia to taste. Stevia gets far sweeter as the mixture cools, so DO NOT make it taste sweet while hot or it'll be sickening when fully chilled. I usually add stevia until I can just detect a hint of sweetness and when it's chilled it's perfect. The last jar I made (last night) I added 1 tablespoon of coconut oil and 1 tablespoon vanilla extract just for flavor.

                • I tried something new tonight. I was given an eggplant and I've never made one before, so I winged it.



                  That's eggplant fried in olive oil with chicken thighs sauteed with chopped fresh tomatoes, sliced garlic and mozzarella cheese topped with fresh basil, fresh oregano and fried hot cherry peppers. Pretty good. I'd definitely make again!

                  Not shown: the bowl of coffee ice cream covered in chocolate fudge sauce I made that followed for dessert

                            Glad you liked it! Pork spareribs IMO are way better than any kind of beef rib. And they're half the price! Win-win.

                              • Shredded pork and potato fries. It doesn't get much better...unless you replace the slow cooked pork with applewood smoked pork shoulder. Damn, I have to get a smoker.

                                Salmon tacos are pretty good, too.
