  • Ice cream!!!

    I scream, you scream we all scream for ICE CREAM! Guess what lucky Motha got an ice cream maker for her special day? THIS ONE! Got some coconut milk ice cream going in my brand new machine. Going to serve it over the tortillas I made earlier with some cinnamon (ala fried ice cream esque-ish)

    and because my husband is epic, here is his idea:

    APPLE PIE ALA MODE
    1 can coconut milk
    4 eggs
    1/4c stevia in the raw
    1 apple
    cinnamon
    butter
    brown sugar

    mix coconut milk, eggs, and stevia and turn into ice cream maker for processing. Dice apple, top with butter, cinnamon, and brown sugar. Nuke in microwave. In last 5 mins of ice cream making, add cinnamon apple mix. *Optional-- Serve over Joyful Abode graham crackers (see joyful abode blog for recipe)

          I made a cherry garcia knock off once in my ninja using coconut milk, frozen cherries, and a twist of torani's sugar free chocolate syrup

                    We are finally going to invest in an ice cream maker....any suggestions on brands? Your husband's idea sounds delicious!

                      it's loud, but it makes good ice cream

                      we added some arrowroot powder to our batch last night & it really helped it come together well (the first batch went soupy FAST)

                        Hi! I just got an ice cream maker for my birthday today! It's my one indulgence, but I can't wait to make my own rather than Haagen Dazs.
                        I was wondering though, as you sound like an expert, what would you recommend about the sugar part of various recipes? I love fruit ice cream, but do you think that honey rather than regular sugar would be acceptable, or at least using unrefined sugar rather than refined white? Am perfecly happy to reduce the quantities in recipes, though I reckon some sugar at least would be necessary for a lot of them.

                        Hope you're having fun with your machine, would love any handy hints you might have!

                          I'm no expert. I just like to experiment. Find a groove that works for you and go for it.

                          I do confess in my most recent batch, I used some sugar free fat free white chocolate jello instant pudding & some coffee creamer. It was devine!

                          1 cup coconut milk
                          1 cup la crema cinnamon vanilla coffee creamer
                          1 pkg white chocolate jello instant sugar free pudding
                          frozen cherries
                          cacao nibs

                          combine pudding mix with liquids, beat thoroughly (it will start to pudding-ize), and place in your ice cream maker. Towards the end, add the cacao nibs, and frozen cherries.

                          enjoy ben & jerry's cherry garcia on steroids!

                          now to answer your question: I use stevia.
                          I also love using spices (cardamom is delicious with vanilla), and sea salt really helps enhance the sweetness
