  • Chicken Izza

    I woke up with a bout of vertigo this morning and Aunt Flo, and I wasn't really feeling up to cooking (sorry TMI). So hubby, bless his soul, took care of it. We were supposed to have bruschetta chicken, but we didn't have any diced tomatoes, so hubby used the last of the chipotles we opened from making chipotle mayo. The resulting dish inspired another in my head! Chicken Izza (like "Itza"). Chicken breast covered with pizza sauce, veggies, and some cheese. Bake thoroughly. In last 10 mins, do extra toppings, and more cheese. Awesome, right?
    A new twist on paleo pizza. Treat chicken breast like pizza dough. Both are tasteless anyway, might as well put some nutritional value to it!

    This sounds like a great idea that I may try with my homemade spagetti sauce thats sitting in the freezer. Thank you!

      That's a great idea, you could pound them thin so they cook faster and are easier to manage, too! I'm adding this to my list!

        Love it! I do a similar one with chicken thighs, salsa, melted cheese and sour cream. Chicken nachos!!!

        And Dr. Bork Bork, have you tried meatza yet? I actually love it more than real pizza now. lol

                      I looked at the recipe that was linked and found a chicken meatza recipe.
                      I had some chicken breast and decided to make it tonight.
                      Chicken Meatza with pepperjack and cheddar, bacon, broccoli and carmelized mushrooms and onions!

                      Fantastic! I have a few tweaks I want to do and then I'll post the recipe. It will be thin crust and amazing. I promise.

                        I've made a taco meatza using ground turkey and mexican spices as the base and that is awesome. I may have to make that again and post pics.
