    Primal pastry.. Anyone?

    Not sure about primal pastry, but this poses a new challenge for me.
    It seems coconut or almond flour would work with some adjustments to liquid.
    The key to pastry dough is cold, cold butter and rolling out and folding of said pastry.
    I'm going to go look for coconut flour today =) Will keep you posted.

        Depends on what you want it for. If it's for a pie crust, maybe you could make it like you would a graham cracker crust substituting the graham cracker with almond flour. Basically butter, almond meal/flour that you would mix together and press into a pie plate. It's something I've thought of trying, but have gotten around to it yet.

        I'm not sure how it would do if you wanted to make a rolled crust.

          I've wondered about pastry too. Unlike bread, the gluten content of flour is not required in pastry - if the pastry is worked too much (gluten developed) pastry is tough. It the flour is rubbed into plenty of butter and lard then only JUST mixed when the water is added, the resulting pastry is light and crisp.

          But I haven't got round to trying to make a pastry using any flour substitute such as almond or coconut flour.

          If anyone does, and it succeeds - PLEASE post!!!

            for pie crust I would do a pecan/butter crust. Not pecan flour as much as ground pecans. (or other nuts...different nuts work better with different fillings)

            But if you are trying to make something like a danish....hmmm

                Potato, rice and cornflour sounds gluten free, not necessarily primal friendly.
                I'll try to find almond flour or coconut flour today and work it with my base pastry recipe. Expect an update and if successful, pics around mid-week.

                      I just tried this recipe using ground almonds instead of almond flour as my cheesecake crust. It's in the oven right now! looks good will report back later! And stevia instead of sugar.
