  • Not-sloppy, fast, sweet potato mash

    I've always hated how wet sweet potato mash is, until someone said to try adding coconut flour to it. Coconut flour, of course, is the dryest thing in the universe so I keep a bag of it handy in case of flood.

    Here's how it goes:

    Bag of sweet potatoes, peeled and chopped, into microwave until soft. Mash.

    Add:
    Enough coconut flour to achieve the texture you want (remember it will firm up a little more within a minute or so)
    Salt and pepper
    Handful of chopped spring onions (scallions)
    Lime juice to taste

    Quick, tasty, and if you want a bit more fat in there, mash in a couple of tablespoons of coconut oil. My new favouritest way to have sweet potatoes.

        I wonder if you could do this for sweet potato chips, almost like a batter. I have such a hard time getting my chips crispy, maybe the coconut flour would soak up the moisture in the sweet potatoes. Hmmmmm, might have to give that a try.

          That's an idea - so you could make the 'batter' really stiff with the coconut flour, then deep fry in something tasty like beef tallow. Nice idea.

            Cool, I might have to give this a try. I have no problem with the consistency of plain mashed sweet potatoes though. Lately I've been eating ~ 2 BIG ones post-workout (4 days a week), probably like 5 pounds of sweet potatoes a week, haha. I think I could eat them pretty much every day and never get sick of them.
