I made quadruple coconut pork chops for dinner tonight and they were so yummy! I took thinly sliced pork chops and marinated them in coconut milk for a couple of hours, and then I dredged them in coconut flour and shredded coconut, and then pan fried them in coconut oil. SO yummy! The key is to let them sit for about five minutes after you dredge them, and then fry them. You have to let the crust sit and gel before putting them in the oil, otherwise the crust will fall off. SO SO good!
