    With a fairly busy lifestyle lately, I'm always on the hunt for very quick out-of-the-ordinary paleo meals. The ones that I seem to find that people think are quick are only relatively quick compared to the longer prep times I guess they are used to. I'm wondering if anyone has any ideas. I'll post a few of my own.

    Quick Shrimp Soup

    1 Can of Wild Shrimp (2.99 @ Trader Joe's)
    Organic Beef Broth (Imagine brand, Trader Joe's brand has cane sugar I think)
    Spices (whatever you want, I like to add Trader Joe's 21-Seasoning Salute, chili powder, and hot sauce)

    Mix together, and cook on stove/microwave until warm/hot (however you like it).

    Salmon Salad


    1 can Wild Salmon, drained
    Cherry Tomatoes
    Onion
    Olive Oil
    Lemon Juice/Balsamic Vinegar

    Mix together and eat.

    Eggplant Sandwiches

    Fresh or frozen eggplant slices, cooked
    Olives
    Turkey Breast
    Tomato

    Put ingredients between eggplant slices and eat like a sandwich.
