  • Sweet Potato Dauphinoise

    So I play Gourmet Ranch on Facebook (as if my Betty Grokker problem wasn't bad enough, right?)
    And have been inspired to recreate the virtual dishes into real deliciousness. Sprouts & bacon butter was a wild success, and now I plan to tackle Sweet Potato Dauphinoise. Only we're a little tight on funds until pay day, so no unnecessary grocery runs allowed til Friday.
    Which leaves YOU, my brave friends, to dare to be my guinea pigs. Anyone game?

    Sweet Potato Dauphinoise:
    2 large sweet potatoes
    1 tbsp butter or ghee (or coconut oil)
    2 cloves garlic, crushed or minced
    1 tsp nutmeg
    1 tsp cinnamon
    1 cup coconut milk (especially the delicious chunky fatty part at the bottom)
    salt & pepper to taste

    grease baking dish for oven, and sprinkle the crushed garlic. Set oven to preheat 300F or 150C. Peel & slice sweet potatoes. Layer neatly in baking dish. Add part of salt, pepper, nutmeg, and healthy fat of choice (EVCO, ghee, butter). Pour a little of the coconut milk. Lay another layer. Rinse & repeat until full. Bake uncovered until tender.

    That does sound delicious. I'm just on the brink of ordering a mandolin - maybe I'll make this when it arrives!

    My friend uses her mandolin to make super thin slices of sweet potato. She then puts a small piece of sage between to sweet potato slices, puts them on a cookie sheet, presses them down with another and then bakes them until they are crispy. She says they are delicious.

        It's too late to try this tonight, but I could do a half-batch tomorrow to go with my roasted chicken thighs.

        hmm... except for the nutmeg. I don't have any and i'm not a huge fan of it.

          i play gourmet ranch too and that's the first thing i thought of when i saw the title i'd thought of looking up the recipes, but i've been too lazy

            Got allspice? I think allspice is super tasty in the place of nutmeg

              Sounds yummy! I just bought a couple of purple sweet potatoes, maybe I should try this with those. That'd be an interesting-looking gratin for sure!
              Do you do dairy? I think if you replaced the coconut milk with a combo of milk and cream and some melty cheese it'd be even better.

                Doing Whole 30 this month, so no dairy... and likely no dairy til I reach my goal weight either. If I do eat dairy, it's going to be an indulgence in Fage Total!
