  • 8 mangos!

I was just given 8 mangos and I have no idea what to do with them.

Does anyone have a good mango recipe?

    EAT THEM!

Make mango ice cream? Dunno if you can do it the same as banana ice cream, but maybe try slicing it up into very small chunks, freezing it, then destroying in blender/food processor into soft serve consistency.

I made a strawberry mango ice cream with raw honey as the sweetener and only used 1/4 cup for 1/2 gallon. Vanilla, some heavy whipping cream and half/half. (I used a basic custard ice cream recipe, substituting the honey for sugar). I'm now wondering if coconut milk instead of half/half would make it a more tropical yummy delight??? mmmmmmm

Mangos are great sliced and cooked with pork and chicken in some butter with a wee bit of fresh garlic. I've also diced them really small and included them in my homemade salsa.

However you eat them, enjoy, mmmm !

If they are unripe (green) you can make a fabulous thai mango salad:
Salad - Thai Green Mango Salad Recipe

If they are juicy ripe, peel and eat with your hands! Preferably in the bathtub so you don't have to clean up after LOL

This is all getting a bit complicated for me. However, I can also contribute a recipe for thick cream: open pot, eat. (Spoon optional.)

                  green smoothie:

one mango, 1/3 pkg frozen spinach, 1 cup almond milk, 1 scoop protein powder (chocolate is especially yummy in this recipe)

kale goes really well with mango smoothies also

Mango+sliced chicken+cilantro+mayo in a lettuce leaf "wrap" is really very good. When the mango is ripe/sweet enough I also love slices with lime juice & a small sprinkle of cayenne.

If they are already ripe, they will go bad pretty quickly. You can puree raw mangos with yogurt, a touch of money and some mint or cardamom to make mango lassis. Anything you don't use in the next few days, peel, chop and freeze. You can puree the frozen mango with some marscapone cheese in the food processor to make a yummy ice cream.

I love to make a mango shrimp BAS! Pretty much just salad greens topped with diced mango, cold shrimp... and garlic aioli. I like to throw in some thin sliced purple onion too. It's SOOOOOOOOOOOOOOOOOOO good!
The more I see the less I know for sure.
