  • The "Everything" Omelet

    THE "EVERYTHING" OMELET


    Ingredients:
    -Any vegetables in your fridge (except legumes/potatoes/etc.)
    -Any meat you like on your omelet (none in my case)
    -Any herbs/spices you like cooking with
    -A small serving of the more primal cheeses (aged parmesan and buffala mozzarella in my case)

    Here we go!

    What I Used:
    -3 large eggs
    -1 tbsp olive oil
    -8 portobello mushrooms, sliced thinly
    -A handful of fresh arugulua
    -A handful of fresh cilantro
    -5 cherry tomatoes
    -Some leftover Indian-spiced cauliflower
    -1 tablespoon of dried onion
    -1 teaspoon of ground garlic
    -1 teaspoon of ground cumin
    -1 teaspoon of paprika
    -1 teaspoon of rosemary
    -Salt to taste
    -2 buffalla mozarella "balls"
    -1 tablespoon grated aged parmesan

    How I Did It:
    -Heat the pan, add the olive oil, add the rosemary after a minute
    -While the pan is heating, beat your eggs and add in your veggies and spices and cheese
    -Let the rosemary start to sizzle, and then pour in the egg batter
    -Cook til golden, flip, add more whatever you feel would make it tastier and eat with relish!

    our family would call these BIG eggs. There are simple omlets with meat and cheese but then there are BIG eggs like you have described. LOVE IT!!
