Another crockpot meal for today, since I will be out later this afternoon.
4 chicken breasts thinly sliced and pounded
dredged in Coconut Flour and S&P
Fry in CO to brown.
Saute Carrot, Red Bell Pepper, onion and a couple handfuls of green beans in CO just for 5 min
Add enough curry powder and red pepper flakes.
combine chicken and veggies in crockpot
Put 1 can of CM to deglaze pan and simmer to thicken a little (I find cockpot is always too watery) pour in cockpot.
Sprinkle a handful of coconut flakes on top.
I plan to leave this on HIGH for 4 or 5 hours.
I'll report back. I'm a taste and adjust sort of cook, so we will see if I seasoned it correctly.
