  • Top Chef - Sweet Potato Noodles

    Sorry no recipe, just saw Richard make this on Top Chef, but it would be great for us. He shaved the sweet potatoes in this rotating sort of mandolin, then cut them into fettucine. What a great idea! It looked delicious. Hopefully they will post the recipe soon.

      I just purchased a device on Amazon.com for like $29.00 in order to be able to make things like this. I was inspired by a recipe I saw here and I can't wait to get it. I really need to cut down on kitchen time and am really craving some curly sweet potato fries.

        Even the judges thought the sweet potato noodles were real pasta. They must have been really, really good.

            I looked up the japanese sheeter mandolin and its crazy expensive... but I think a regular mandolin would work too.

              Mandoliners, be careful! It's one of the most common kitchen injuries my hubby sees in the ER.

                Aha! Thanks April!

                1. On a Japanese Sheeter Mandolin, shave sweet potatoes and trim into noodles the size of fettuccine.

                2. In a pan over the wood-burning grill, warm the noodles in chicken stock and the onions and mushrooms.

                3. When al dente, remove from the fire and swirl in the scallions, lemon juice, and butter

                        i tried making sweet potato noodles using a vegetable peeler once, was not my finest culinary hour

                          those sweet potato noodles looked amaaaaaaaaaaaaaazing! i think they're probably outside my cooking skillset though...
