  • Beef jerky marinade suggestions...

    All right, I have 4 pounds of beef eye of round steak in my refrigerator and a dehydrator waiting to be used, and I need suggestions on what kind of marinade to use... I was thinking about marinating 2 pounds in coconut milk, although I'm not sure exactly what spices pair well with a coconut flavor (maybe cinnamon and ginger?). and the other 2 pounds marinating in some kind of coconut aminos mixture?

    I don't want to use any sugar or worcestershire sauce...

      Two recipes come to mind immediately for me, although I'm sure you can find many more through google.

      Ours (using coconut aminos): The Food Lovers' Primal Palate: Beef Jerky
      And "the domestic man's": Homemade, Gluten-Free Beef Jerky The Domestic Man
      - his is similar to ours but does add a few ingredients (which you may want to omit). I'd leave out the worchestershire sauce. I don't think you'll miss it.

      Honestly, some of the best jerky I've made is simply using salt, pepper, onion powder, and garlic powder. Just lay out the meat, sprinkle as much or as little as you want, and dehydrate.

        Interesting recipes. Wish I would have seen them a few hours ago, as I started marinating my first try at beef jerky earlier this evening.

        I'm trying a thai-ish version for mine - soy sauce, lime juice, chili powder, fresh garlic, garlic powder, salt, pepper. I sliced mine 1/8 to 1/4 in thick like the recipe I had said to - I hope they turn out ok!!! The beef in the links above is much thinner.

        I'll let you know how it turns out.
