  • My Everday Breakfast - egg salad

    I'm only listing the approximates here, you'll have to use some imagination to sort out how much you want to use:

    cucumber,
    onion,
    green onion,
    and bell pepper (all finely chopped)
    peas
    two soft-boiled eggs
    some olive or coconut oil
    balsamico vinegar
    salt and pepper

    Finely chopped because this will not be fun to eat if you have large chunks of onion hanging around. Also, you want the consistency to be fairly mushy, like cole slaw, and chopping will facilitate this. Mix ingredients all together, until everything is coloured by the yolk. The egg and the peas will give this a potato-salad taste/feel. Adding more oil will make it thicker and creamier. I think this is a fairly nutritious breakfast, because of the raw vegetables, esp. the onion.

    I often eat egg salad for breakfast but I make it with 3 eggs and 4 tsp Hellmans olive oil/canola oil blend mayonnaise.

    I cut up some sweet onion and throw that with the eggs (quartered) into the KitchenAid and in a couple of seconds its all chopped up perfectly. I like it seasoned with some onion powder a smidge of garlic powder, Himalayan sea salt and fresh cracked pepper. I stuff it in a red pepper half and add a side of veg and some fruit.

            Mmm that is what I had this morning along with leftover roasted beets and a Granny Smith sliced with cinnamon and green tea.

              Hard boiled egg + tuna fish + onion + celery + Little Mayo = Breakfast!
              And the meek shall inherit the earth.
              What good is a used up world, and how could it be worth having?

                I don't actually think peas ARE legumes, but don't quote me on that. Anyway, you can eat peas raw, which is one of the primal indicators of edibility. And if you're a die-hard Mark Sisson fan who believes his word is canon, it doesn't get much clearer than this: Genius Fuel! | Mark's Daily Apple :P

                  The recipe looks delicious! I love soft boiled eggs.

                  To clear up the confusion: Peas are legumes and legumes are in general not considered an approved Primal food, however, I think green peas are not that bad and green beans (also legume) are even more benign. I mean the recipe photo on the front of the PB cookbook has green beans in it if I remember correctly, so obviously Mark doesn't think they are that bad (I agree).

                  den.sidste.messias: I'm not sure how old that post is. Mark may have changed his stance since then. I'm pretty sure he has some really old posts where he advocates edamame (soy beans). Pretty sure he doesn't approve of them so much these days.

                        I view them as legumes when dried and reconstituted. They are a veg in my book when they are fresh! And even dried - they make a fab soup when cooked with bacon joint stock. Too good to pass up!
