    I ran this through my mastercook program to get the carbs...7 each after you minus the fiber

    I need to use up my zucchini so was messing in the kitchen today, I hope you like them xoox Darlene

    Chocolate Zucchini Muffins


    Serving Size : 12


    Amount Measure Ingredient -- Preparation Method

    -------- ------------ --------------------------------

    2 cups zucchini -- shredded

    1 cup almond meal

    1/2 cup cocoa powder(I used organic Rapunzel brand

    1/2 cup xylitol( you can use whatever)

    3 large eggs

    3 tablespoons coconut oil(melted)

    1 teaspoon vanilla extract

    1 teaspoon cinnamon

    1/3 cup coconut milk(add to desired thickness)

    1 teaspoon baking powder


    * mix all up and pour in cupcakes pan with liners

    bake 350 degrees for 15-20 min or until toothpick comes out clean!


    7 carbs each after minusing the fiber!

    NOTES : * shred zucchin with skin on

    I used xylitol

    and organic dark cocoa

    This sounds great When it is poured into the tray does it rise much?

      well like a normal muffin...but not super high
