  • Coconut Flour Rolls



    After doing my experiment on making tortillas over the weekend, I realized that what I ended up with would make decent rolls. I've been thinking about a decent hamburger, but didn't want regular rolls.


    So, I made my own using coconut flour:

    It's an 'in progress' recipe that isn't perfect yet, but it's reasonable in this state.

    This still ends up being 40g of carbs for that recipe, but 26g of it is from fiber, so that's not super-terrible. I think forming the rolls a bit thicker would work better, and could easily make 4 rolls total out of this recipe instead of 2 rolls total (i made halves individually)

      Interresting alternative for me, a totilla lover. But the xantan gum? Before I started my primal journey, addatives to regular industy tortillas like this "rubber" thing, was one of the reasons i restricted my tortilla feasts.

      From what I know it is produced by bacterial fermentation of sugar?

        well - these aren't tortillas. just bread-like rolls, more than anything.


        both xanthan gum and guar gum are basically the same thing, apparently. I didn't see guar gum at my grocery store.


        The 'stick' property of gluten is probably the most difficult to replicate using anything else.

          Thanks for the info! I'just trying to rid myself of addatives. Reading ingredient lists on, for example tortillas, icecream etc, had made me suspicious, and I still am, since it seems to be alot of processing in making it.


          anyone else with more info?
