  • Primal mango chutney

    I have 1 tray of magoes that will go off in about 2 days time, so I am wondering what to do with them seeing as we won't be able to eat that many mangoes by then. I am thinking of a mango chutney or maybe a mango icecream. Any recipes?

      Yes I can. I have just made some mango Icecream using the coconut recipe from the primal cookbook. I will cut some up and freeze for chunks in smoothies and maybe I will google a mango chutney recipe.

        That's good - such a shame to waste good mangoes.

        Can you share if you find a primalish chutney recipe? My fish shop is serving grilled salmon with mango chutney, but I have avoided it in case the chutney is loaded with sugar, but it seems a very tempting combo...

          I sure will. I am hoping of course someone on here has something but none the less that will be a project of mine tonight when the kiddies have gone to bed. Hopefully the icecream turns out great. I had to substitute one of the canned coconut for half cream and half milk as I only had 1 can. Fingers crossed.

              OK - so I have done a bit of searching for mango chutney recipes and the problem is that all the recipes I have seen call for a LOT of sugar. I suspect you upset sweet/sour balance (for which good cooks have a great instinct) and as tempted as I am to try a recipe without the sugar, everytime I bastardise a recipe its a disaster!

              maybe bumping this someone can recommend something?

                I received a link on facebook this morning from the primal group and she makes her mango chutney from the food network and the recipe is by Alton Brown. If you google mango chutney or perhaps get onto the food network its on there. She says she makes it as is except for the sugar, so it must turn out ok. I am going to try it!

                      Can't help as far as a chutney, but I like to make a basic mango salsa that goes well with chicken or fish. Dice a mango or 2, add some diced red onion, some very finely diced (and seeded!) habanero pepper, a bit of salt, some diced avocado, and some cilantro if you are into that kind of thing. Let the flavors meld together in the fridge for a couple hours. Sorry I don't have specific measurements, I just use the eyeball and taste method.
