    I hit the jack pot today and made these:

      Sounds great! I'm wondering if there is something I can use other than baking powder (because mine has cornstarch) that won't change the consistency too much.

      Anyone??

        We must be on the same wavelength. I made pumpkin muffins this weekend with almost the same recipe. Did not use any added sweetener. They were fabulous with nut butter.

          baking powder (because mine has cornstarch
          The corn starch is just there to keep the mixture dry so it doesn't prematurely fizz.

          To make your own baking powder buy the tartaric acid and bicarb separately and mix as you need it; 1/3 bicarb 2/3 tartaric.

            Well how about I thank you NOW!

            My coconut flour is on the way from Tropical Traditions, should be here by Friday......SO excited to try these, oh and YES there will be 85% dark heavenly chocolate chunks in it too!

                These were A-MA-ZING! Thanks so much for the recipe. I made a loaf - not cuffins -- but my husband, daughter and sister (who was over) all loved it too

                  revamped and new recipe using macadamia nut butter. a grain free "bread" that tasted like pumpkin pie!
