I just made this for dessert tonight and wanted share. Next time I'll see if the coconut cream whips up by itself without the dairy cream.
Place a small metal bowl and wire whisk in the refridgerator 15 minutes before making.
3 Tbsp whipping cream
3 Tbsp coconut cream (unsweetened)
1 tsp vanilla
1/4 c. each black berries & huckleberries (or your preference)
Pour the cream, coconut cream and vanilla into the bowl you froze. Using frosty whisk, hand whisk the liquid until it's at your preferred consistency. It takes a while, your arm will get tired but keep whisking.
Toss the berries on top and enjoy.
Makes one to two servings.
