    I just made a coconut milk and fruit smoothie that is so delicious that I licked my glass (no kidding!). Thought I would share it with you. Mind you, my original recipe has a little apple juice in it but I will change that to reduce the carbs.


    Coconut Milk/Fruit Smoothie


    3 med/large frozen strawberries

    1/4 c frozen huckleberries

    1/2 c chopped mango

    3.5 oz coconut milk

    1 tsp vanilla

    2 oz apple juice*


    Blend, makes approx 1 8oz drink. The coconut milk makes this so luscious, rich and delicious.

    *will change out apple juice for strong green tea and see what happens; it'll also drop 7g carbs to make it a total of 25g rather than the 32g.

    Nutritional info: 324 calories, 32g carb, 20g fat, 3g protein.

    That sounds delicious shalon. I'm tempted to make this tonight. I'll probably add a little bit of cocoa to get my chocolate fix.

      I always throw in a handful of baby spinach into my smoothies, just to get more greens in!

          My nutrition professor told me that we can't actually absorb the vitamins and minerals in spinach unless its cooked...I used to add spinach to my smoothies but now think it could be in vain..

            At that quantity of spinach, it's a non-issue, either way.


            It's sort of like at communal potlucks someone adding some sunflower seeds to a salad and making the witty - NOT! - remark of adding some protein. The quantity just precludes seriousness.

              @Jess, I think it has something to do with the oxalates present in raw spinach. Oxalates bind to iron and make them less available for the body.

                So, is it a waste of my spinach to put it in my shakes? By the way, how do you guys store your coconut milk and for how many days? I just bought a can the other day.

                  It stays good for at least a few days in the fridge. Probably a lot longer, but I've never had the desire to find out!

                    After using what I need out of the can, I put it into a glass storage container and put it in the fridge. Definitely get it out of the can once it has been opened otherwise you'll pick up "can flavor" for some reason. Mine doesn't last longer than a few days after I've opened it.
