I searched to see what Mark had to say about okra... pretty nice endorsement:

If you can get your hands on some okra, try roasting some in the oven or on the grill. There are lots of variations of this online, and here's a link to my first attempt:
I am starting to think that the only way to eat most vegetables is roasted. It sure brings out the flavors, and it is a good way to add a little fat to your diet without a lot of extra calories.
