Cauliflower and leek soup

  • Cauliflower and leek soup

    You will need:
    500 grams of frozen cauliflower
    2 large leeks
    7 slices of streaky bacon
    1 large white onion
    3 celery ribs
    4 cloves garlic
    3 tablespoons butter
    salt and pepper
    1 teaspoon turmeric
    3 tablespoons Organic double (heavy) cream
    Optional- grated cheese
    Water

    Chop the vegetables, discarding the toughest green bit of the leek. Fry bacon in butter until crisp. Add the turmeric and all the vegetables except cauliflower and fry until softened. Cover with enough water to boil and add cauliflower. Boil until the vegetables are softened, adding more water if required. Blend with a hand blender. Add cream. Serve in bowls with cheese added if you like.

    I made this yesterday with squash added to it, and it was lovely.

    Note- You only need to discard the last inch of the leek.

    Potato leek soup is one of my all-time favorites, and I haven't had it in over a year. I'm going to have to try this! Thanks!

      You're welcome it's just like cauliflower and leek. Cauliflower is a great substitute for potato in soups, you can't really tell the difference once it's blended.

                Yeah, it should go well with my 12" iron skillet.

                It's funny, cauliflower was one of those vegetables I never ate (mushrooms too). Now I can't wait to try this soup.

                    Interesting, I started making this at the start of the year off the top of my head and my recipe is just about exactly the same.

                    Agree though, this is now my favorite soup.

                      As cauliflowers and leeks are in abundance ie in season here now, I will have to make this. Should be spring here but bloody cold so this will be good for 'our eat quick and get out of house' meal needed on Wed.

                              We had it tonight and it was divine. I added shredded cheese because I'm not afraid of dairy, as well as black pepper, lots of it, and a touch of salt. Came out amazing, and we have leftovers yay!
