  • Almond Meal Pudding

    I am an almond meal fiend. I am experimenting with it more and more.

    Here is my latest creation for you to try:

    Almond Meal Pudding


    Ingredients
    • 1/3 Cup Almond Meal
    • 1 Beaten Egg
    • 4 Tbsp Water (or 4oz coconut milk)
    • Stevia / Honey / Sweetener to Taste


    Directions
    Mix it together well (use a hand blender if you have one) and then microwave for 45 seconds.

    Take it out, stir it up real good, and then cook until its hot and has a pudding texture (approx 30 seconds more)


    Okay, that is the BASE recipe for the pudding.... now for the fun part.

    Add any of the following for sweeter:
    • Cocoa Powder
    • Mixed Chopped Nuts
    • Fresh Berries / Fruits
    • Little Chunks of Dark Chocolate


    Add any of the following for savory (after removing the stevia/sweetener from the recipe of course):
    • Use chicken stock instead of water
    • Butter
    • Cooked, Crumbled bacon
    • Scrambled Eggs and Sausage


    This is pretty much a hearty oatmeal like substance that can be used for quite a few preparations. My favorite at the moment is cocoa powder and blueberries.

    edit: Also all you weirdos who think microwaves are killing machines... sucks for you because this stuff is yummy.

      That sounds good Rivvin - new brekky ideas are always welcome. I'm not sure what almond meal is though - could I make my own by blitzing up almonds?

          Just had a bowl with one variation. I used coconut milk instead of boring old water.

          Good stuff! I wouldn't have thought of mixing egg and almond meal together.

            I totally forgot about that! I had also subbed 4oz of coconut milk for the water and it was MUCH more creamy. I will add it to the post, thanks!

            Also, I was able to make this with coconut flour as well but I still need to work on the liquid to flour ratios... it was a bit dry compared to the almond flour version.

              Did a search for primal pudding recipes and... there you were, you knight in shining armor! Gonna try this right away. Ooh, I could stir in a melted square of chocolate... that would be good...

                To make with coconut flour:
                The amount of liquid to use varies depending on what else you have in there because the coconut flour is so goddamn greedy it just sucks all the liquid up. Basically just keep adding your liquid of choice until the texture is a bit soupy... it is going to dry out a LOT when you cook it, so err on the side of watery instead of trying to keep it thick.

                Big Batch: Use 1/4th cup coconut flour
                Small batch: Use 2 tablespoons of coconut flour.

                  Rivvin, this sounds promising for my toddler's breakfast! (posted about that over here http://www.marksdailyapple.com/forum...dler-breakfast and this thread was the first suggestion)

                  But we're not supposed to give honey to a kid her age -- I may need to depend on the post-cooking additives to sweeten it. Maybe some applesauce after the cooking, that might do the trick.

                    ...ehh, I think applesauce would be pretty gross in it. I could be wrong. I've got nothing against applesauce, I've used it in other recipes, but I don't think the texture is a match.

                      We'll see what she goes for -- I'm trying to pass this off in lieu of her morning oatmeal. She doesn't know how smooth pudding is _supposed_ to be, so I might get away with it.

                        You can also cook this in a pan on the stove, it will thicken like oat meal and is less fussy to make than in the microwave if you use a nonstick pan. Pecan meal is very good in this recipe also.

                        Add a splash of cream and berries and serve.
