  • Avocado Salad Dressing?

    Has anyone tried to make salad dressing with an avocado? I'm thinking something ranch-y but I'm not sure what to add to thin it. Sour cream? Milk? And what seasonings go in ranch? Salad dressing is one of the things I've never made from scratch.

    That sounds really good, and I'm working on building a collection of salad dressing recipes, so I Googled it and here's a good sounding one:

    Ingredients

    * 1/3 cup olive oil
    * 1 clove garlic, minced
    * 3/4 cup chopped fresh cilantro
    * 2 avocados, peeled, seeded and cubed
    * 1 large cucumber, peeled, seeded and cut into chunks
    * 1/4 cup lemon juice
    * salt and pepper to taste

    Directions

    1. Puree the olive oil and garlic in a blender until smooth. Add the cilantro, avocado, cucumber, and lemon juice. Puree again until smooth, then season to taste with salt and pepper.

      I know that lemon juice helps to keep avocado from browning, but 1/4 cup sounds kind of over-powering. I think I'd start with 1 T. and give it a taste.

      I never thought of adding cucumber to it; that sounds really good!

        I've tried this one with good results. You could change the spices to make it more ranch-like.
