    ok so I dug up a bunch of my old lc standbys when I use to do another program, I haven't finished the whole book yet so please let me know if any of the recipes I post aren't legal, I love this one xoxo Darlene


    Vegetable Nachos


    slice up red, yellow and green bell peppers

    sprinkle with cheddar cheese pop them in the microwave for about 3 min on medium

    to make even yummier

    top with ground beef(drained)

    tomatoes, olives green chilies, lettuce etc

    pico de gallo avacado

    you can make this a full meal!

    Thanks, PG! I watched my roommate make a plate of tortilla chips with black beans, refried beans, cheese and sour cream...I showed her up with your variation. Instead of using the microwave though, I sauteed some peppers, onions, and black olives on the stove, dumped it over a plate of chopped lettuce, and put in some warm chicken breast and avacado, topped with a little salsa. Devine!

        Ohhh... that sounds so good!


        Anybody ever make chips out of veggies? I'm thinkin' some squash chips might be fab for nachos.

          I made red cabbage chips the other night and they came on great, takes patience ;(


          Did you see CastleGroks pizzas? He made a crust with cucumbers!!!!
