  • Olive Garden's Zuppa Tuscan Soup

    This tastes exactly like Olive Garden's - it's one of my favorite soups! And it's so EASY to make!


    2 pounds ground italian pork sausage (spicy)
    4 slices raw bacon (cut into small pieces)
    1 large onion
    1 T garlic (crushed or pureed)
    10 cups chicken stock
    Optional * 4 or 5 large red potatoes - sliced 1/4 inch thick (skins on)
    1 cup heavy cream
    1 stalk kale

    Fry sausage, drain and set aside.

    In deep pan or pot, fry up bacon pieces and when fat begins to render, add onion and garlic until cooked through.

    Add chicken stock to pan with bacon mixture. Bring to boil and add sliced potatoes. Simmer until potatoes are cooked, BUT NOT MUSHY (about 20 mins).

    Add cream, kale and cooked sausage and heat through. Serve and enjoy!

      Ok so I made this. One recomendation, use a low or no sodium based Chicken Stock. The Italian Sausage and Bacon will add plenty of salt.

        Hang on a cotton pickin' minute - it's got spuds in it, didn't think we ate spuds...?

          Eat them in moderation. Red Skim potatoes are better then White Potatoes.
          You don't have to add them either. I bet you could use Jicama instead.
