Greek Chicken Soup (kotosoupa avgolemono) with courgette (zucchini) noodes

  • Greek Chicken Soup (kotosoupa avgolemono) with courgette (zucchini) noodes

    olive oil
    1 white onion
    1/2 litre chicken broth
    1 carrot cut into cubes
    1 chicken breast cut into small cubes
    1 courgette (zucchini)
    1 egg
    1 lemon

    Mince the onion with a small processor (or chop finely) until smooth.

    Heat olive oil on medium heat and fry onion until soft

    Add chicken broth to fried onion

    Add chicken cubes and carrots to broth and boil for about 20 minutes until carrots soft

    In the meanwhile peel a courgette into noodles with a julienne peeler. Do not peel to the centre of the courgette as it's not particularly tasty.

    Beat egg lightly in a bowl and add juice of lemon

    Remove soup from heat and wait to cool down a bit

    Take several spoons of broth from soup and add to egg mixture and beat lightly as you are adding the liquid.

    Pour egg, lemon and broth mixtue to soup and stir well.

    Add courgette noodles and cook while the soup is cooling down. They won't take long to cook as they are very cut very thinly.

    This was fantastic and it really satisfied my craving for noodle soup.
