  • Paleo Pizzelle?

    Hi, I've been making tons of recipes from the primal cookbook and my family loves them.

    Does anyone have any suggestions on making my pizzelle recipe paleo?

    My recipe is: 3 eggs, 3/4 c sugar, 1/2 c butter, 1 t vanilla, 1 t anise, 1 3/4 c flour, 2 t baking soda. Being Italian, we can't imagine not being able to eat pizzelles!

    It's best and easiest to give up on the idea of making primal baked items. Just _give_up_on_the_idea. Go cold turkey. Find something else that is primal to occupy that niche.

      We have pizzelles every year--Christmas time. Part of what all the friends and neighbors get from us. They (the pizzelles, not the neighbors) have been sugar free for years. My wife experimented with stevia last year and it came out fine after a few tries. This year we intend to try using coconut flour or almond meal. I would ask her for quantities if she were here. You can try the stevia and coconut flour or almond meal in your recipe. Sorry not to be more helpful.

        Thank you for your ideas. I was thinking coconut flour too. I was stuck on the sweetener. Maybe honey or maple syrup?

          The reason I wanted to give it a try was because I made Mark's walnut meal brownies and they were outrageous.

            I tried coconut flour last year and I used coconut oil. I think butter would be better..... I like the stevia idea though. Almond meal might be good too. We make them and give them away each year as well. Would like my own primal version to help avoid the others.....

              Someone I believe put grated sweet potato into the waffle maker to create paleo waffles. Not sure if you can take that as a substitute if you spice sweet potato with the same spice you make for your pizzelles.

              Crepes come out perfect from mixing 8 oz cream-cheese with ~ 1/4 cup egg whites. I have no idea if it kills a waffle maker.

                  OMG!!! If you liked those try adding in some enjoy life brand chocolate chips and they are absolutely heaven in a pan! Best brownies ever.
