I strongly suggest trying this if you never have. Pre-PB I used to put a little bit of milk in my eggs all the time to enhance the flavor and make them a bit fluffier, and I only just considered coconut milk as an alternative. The results were better than I expected, and gave the eggs a more unique (and tastier, I think) flavor than with dairy. I might start doing this with omelettes from now on.
