  • Oatmeal/Cream of Wheat Sub

    Hello everybody,
    I don't really miss a lot of non-primal foods, but Oatmeal was one of those things that I ate almost every day. I don't know how many oatmeal replacements have been posted because I'm too lazy to search, but I thought I'd throw one up that I whipped together that really works out for me when I need to hit that oatmeal spot. It comes out a little closer to cream of wheat but really tastes pretty close if you ask me.

    1/2 cup unsweetened grated/shredded coconut
    1/4 Pecan meal (i know almond meal is better, but pecan meal is CHEAPER)
    1/4 milled flax seeds
    Water to desired consistency
    Splash of unsweetened Almond milk
    Small handful blueberries
    I sweeten with pure stevia extract powder, a little raw honey works too.

    I just mix the coconut, pecan meal, and flax seed with a bit of water and put it in the microwave for one minute till it is oatmeal-like (don't kill me for using the microwave, this is truly the only thing I use it for). I splash a very little almond milk on it, throw in some blueberries, sweeten to taste with stevia or raw honey and go to town on it. Let me know what you think.

    Flax really isn't all that great, even in it's milled form. I wonder how this would work with chia seeds... I think I will try that this weekend and see what I get!

      I've heard that... I think the flax help with the consistancy and taste more than anything. Note that I don't eat this but once a week maybe...

        What is wrong with Flax? I thought it was meant to be a good source of Omega 3?

            you know when you are talking almond meal is it 1/4 cup of nuts ground or 1/4 of the actual meal?
