  • Zucchini Lasagna

Trying to use up some of those summer squashes right now? Try this.....always a favorite around our house!

    Zucchini Lasagna

I like to cut up a couple servings after cooking and freeze for an emergency meal, but anymore there is never any leftovers!

    Enjoy!

I will make this for sure. Summer squash is in abundance right now. Maybe I'll use pattypans, they seem to produce a bit less moisture. Thanks!
          Eggplant lasagna sounds good too....

Yup, definitely not a dairy free dish. I might cut back my dairy in august, sort of getting a couple of these recipes out of the way beforehand

Wow, this looks delicious! I'm always at a loss as far as what to do with zucchini besides things like muffins and breads. Thanks!

                            This looks awesome!

A tip I've learned from making squash noodles is to lay out noodles on a couple of layers of paper towel & sprinkle salt on top (The salt will help draw out the moisture). I normally leave the squash for about an hour and then pat the squash dry with more paper towel.

Thanks for the recipe - it looks amazing. I am going to make it without the cheese (don't mix meat and milk together) tomorrow.
