  • My friends, I have found bacon nirvana!

And it shall be called "Heritage Bacon" all natural maple syrup smoked bacon from Berkshire pork! Bought yesterday at Fairway in NY. Tastes like probably what bacon tasted like 200 years ago.
I had two thick slices with steak (cooked together) over your basic mixed veg. Heaven. More tomorrow!

    What's your favorite bacon?
If you are new to the PB - please ignore ALL of this stuff, until you've read the book, or at least and this (personal fave):

The best bacon I have found here is the apple smoked from Trader Joes.

My favorite is actually a store brand uncured applewood-smoked pepper bacon. (Calling Wegmans food "store brand" just seems rude, it's usually better quality than most name brands!) It's much less salty than standard bacon, the slices are a little thicker, and it doesn't really cost any more. =]

I'm blogging again, at least a little bit.

There's a guy at the market here who does all apple smoked meats. No added sugar and low sodium.

I found bacon from this company today at Grocery Outlet for $2, no nitrates/organic/etc. but it comes precooked - is that an issue?

Neiman Farms uncured applewood bacon at Trader Joe's rocks my taste buds.
