  • Blueberry coconut ice cream!

    Ok, I am making this right and cannot wait to have a bowl!

    Ingredients: (you could double or triple this)
    1 can organic coconut milk
    1 cup blueberries ( i used frozen)
    2 packets stevia
    1 spoon of honey ( optional)

    Put all into a cuisinart and blend. Put in freezer, ( in the cuisinart container if you can remove it) take out every 30 minutes and give a "blend" to keep the mix moving towards the ice cream consistency. Takes about 2-3 hours depending on your freezer.

    It tastes so good! i cannot wait to try with peaches, hazelnuts, chocolate, lime, lemon, strawberries, vanilla...I mean the possibilities are endless! Coconut milk is very nutritious and a source of the sought after potassium!

    Another big ass PLUS for primal. I was getting sad this weekend watching my friend eat her baguette and jam and cappuccino for breakfast as I ate my lowly egg and token apricot and black coffee. So, thanks for being here Primal Blueprint Board - I was close to buying a baguette this week!

    Sounds great. Full fat coconut milk makes a great base for ice cream.

      My dh's favorite is strawberry. I just made some w/ cherries a few days ago- I blended some then just chopped some in quarters- added in Lindt 85% and some chopped pecans, 1 vanilla bean and viola! Deliciousness!

          Carbs or not, is the stevia necessary? The subtle sweetness of berries is quite luscious.
          Started PB late 2008, lost 50 lbs by late 2009. Have been plateaued, but that thing may just be biting the dust: more on that later.

            True true...next time i may try without the stevia or honey. stevia doesnt have carbs as far as i know.

              yummmmmmy! i'd skip the stevia too. berries will add necessary sweetness imo.

                Wow! So I am in the process of making this now! I stirred a little but and tasted what was on the spoon and it was GODLY!!! I love it!

                      I just ate it and it was delicious! I wish I could find a way to make it a little creamier. I would like to purchase a ice cream maker soon!

                        I made it with fresh jersey blueberries, chopped pecans & shredded coconut in an icecream maker. Before you buy one to make it creamier, realize its mor like a product they had as I was a kid called "Ice milk". Still pretty rockin' though.

                            Recipe sounds fantastic. If I get fresh blueberries they rarely make it in to the house. I'll have to try harder next time.

                              @invino77 thanks a lot for this recipe! it rocked. i added some unsweetened cocoa and it turned out great! i skipped the stevia! do share more primal deserts!
