  • Paleo coconut cheese

    So cheese is great but I don't do well with dairy and soy and rice are obviously out. So....

    Put a package of creamed coconut and about half a package of pig skin gelatin in a saucepan with about a cup of water or enough to get a batter sort of consistency. Less viscous than water but not by a whole lot.

    Cook until hot

    Pour into a container and let harden.

    That's it. It is like cheese with a little bit of a coconut flavor. Salt to taste. I think that some people use vinegar to make cheese taste better so I might try that next. Spices may be good too. Honestly all I do is bake meat, steam vegetables and throw stuff into other stuff for my food so I'm expecting some brave souls to improve this and report back.

    and speaking of weird cheese substitutes, ever try vegan cheese? Ye gods that stuff is AWWWWFUL. Blasphemy to even call it cheese. Like a hard block of hell dyed orange.

        +1 to real cheese, although this one is totally paleo and doesn't hurt my tummy. -20 to vegan cheese. Especially made from soy. It is like eating plastic, and not even awesome plastic.

                  What about adding nutritional yeast? Do you think other fat stuff would work (I've not worked w/ pork gelatin...tips on how to get this?)

                    You might enjoy this cookbook: http://www.amazon.com/Ultimate-Unche.../dp/1570671516 . Most of the recipes use nuts (as opposed to soy) and they use nutritional yeast.

                    I prefer the real thing but I know that some people can't do dairy.

                      Thanks! My son has a problem w/ most nuts (and dairy), so if I could figure out a way to do this w/ coconut, it would be awesome!

                      I'm realizing now 'pork skin gelatin' is prob. just gelatin, right? I could prob try this w/ my beef gelatin...going to work on it!!!
