  • Primal Sandwich! Eggplant, Salmon and Sardines

    Eggplant, Salmon, Sardines and Goat Cheese Sandwich

    Eggplant, the "bread"
    -Slice about half inch thick, salt, let sit 30-45 min, pat dry
    -Dip in egg wash
    -Pan fry in butter, turning once, about 5 minutes total

    Salmon, Sardines and Goat Cheese filling:
    -One can boneless salmon (or fresh if you want)
    -One can boneless, skinless sardines (I used non-flavored sardines)
    -2 oz. goat cheese (I used a peppered cheese)
    -2 stalks celery, chopped fairly thin
    -1/2 a small onion, finely chopped
    -1 to 2 T. of fresh chopped parsley
    -Couple of robust squeezes of lemon juice
    -Salt, pepper, herbs de provence to taste

    This should serve two people very well. As for myself, I had it for dinner and the leftovers are my lunch tomorrow.

        I am making that as soon as I can get to the farmers market for some fresh eggplant. I love the stuff but have been at a loss of how to make it it if not breaded. That looks so good!

            I'm drooling. Is the eggplant stiff enough to be eaten with hands, or is it better with a fork and knife?

            Regardless, adding eggplant to my grocery list!

              It's firm enough to eat with your hands but you definitely need both hands. My eggplants were smaller than I normally buy, probably 3-4 inch diameter but it was perfect for the sandwich.

                That looks amazing! Must try. Should be a good use for the tin of sardines I bought but haven't worked up the guts to open yet (though I do recall my Dad regularly eating sardine & onion sandwiches as a kid...we used to eat the sardines then but haven't for probably 30+ years).

                  Greensprout- the sardines were really very mild with everything mixed in. Don't be afraid! =)

                      That looks awesome, but I dunno. I do miss my weekly burger, and I think that may be the route for me. Great idea say rahhh.
