  • Pickled eggs, anyone??

    I'm not sure if there is a recipe in the PB cook book for pickled eggs or not but either way I don't have mine yet it is due on the 10th. I have tried making pickled eggs before and following the advise from a friend I used malt vinegar, needless to say I found them gross!! I'm looking for a recipe that is good that I can also throw in some other veggies perhaps.(green beans, onions, peppers)

      I also made spicy pickled eggs. The recipe is as follows...


      Spicy Pickled Eggs

      Ingredients:
      - 1 dozen eggs
      - 1 cup apple cider vinegar
      - 1 cup white vinegar
      - 2 tsp sea salt
      - 1 tsp pickling spice
      - 1 clove garlic
      - sliced onion
      - tsp mustard seed

      Boil eggs until cooked medium to hard. Drain, cool, and peel.

      Chop onion or cut into rings, mince garlic.

      Gently heat vinegar in a large sauce pan. Add garlic, onions and spices and heat to boiling. While brine is heating, put eggs into wide-mouth jars. Be sure to leave some breathing room. 8 eggs to a jar is ideal.

      Remove brine from heat and carefully pour over eggs, covering completely.

      Seal jars and refrigerate.

        Thanks, I'll give them a try. I am going to do the spicy one and probably add some fresh hot peppers.

          I used this recipe with raspberry wine vinegar. Very good.

            Thanks so much for this recipe, it's exactly what I was looking for. Got two dozen eggs pickling in the fridge now.

                If you're going to toss in some other veggies, I suggest cauliflower florets. Yum.

                  We've been eating a ton of red-beet pickled eggs. You just put about 6 whole eggs in a container with a can of beets (including the liquid) and half a cup of vinegar. SO yummy.

                    I have been making the red-beet pickled eggs as well but then I looked at the jar and found it had High fructose corn syrup. I have found a Jared variety with out the extra sugar. I will also just make my own from beats, onions and eggs. I keep finding these little extras that manufactures add to a product to make it super sweet. Watch out for the extra sugar added.
