    For thick onion rings:
    Cut onion into rings.
    Cover in coconut flour.
    Dip into egg wash.
    Cover in coconut flour.
    Dip into egg wash.
    Cover in almond meal.
    Fry in coconut oil.

    For lighter onion rings.
Cut onion in squares. (wakka wakka, just kidding)
    Dip into coconut flour.
    Dip into egg wash.
    Dip into almond flour.
    Fry in coconut oil.

    For awesome onion rings:
    Cut onion into Triangles.
    Dip into coconut flour.
    Dip into egg wash.
    Dip into crushed pork rinds.
    Fry that shit up.

There's one on this page (use your browser to find "onion rings") if you're ok with arrowroot: http://animalability.yuku.com/topic/...o-Recipes.html

Question about the coconut oil...do I need refined for frying because of the higher temp?

All the ideas sound good, but this one sounds the best!
