  • Need a suggestion - pork shoulder leftovers

Hi all, I need some suggestions for my leftovers. We grilled a pork shoulder on Sunday and had a couple dinners of pork lettuce wraps with cilantro, salsa, onions, and lime juice. I want to do something different with the rest of the pork, but nothing is coming to mind. Any one have any ideas? A good stew recipe maybe?

Could do pulled pork with primal bbq sauce, or:

Chile Verde -- Super yummy and super easy!
4-5 lb boneless Pork Shoulder Butt, cut into 1-inch cubes
    17 oz diced green chiles
9 garlic cloves, chopped (or about 2 tbsp. minced garlic)
2-12 oz cans Whole Tomatillos, drained
Rind of ˝ of an orange
    2 Beef Bouillon cubes
    ˝ tsp. Cumin
    ˝ med White Onion, chopped
    8 oz beer

In a dutch oven, or cast iron skillet, brown pork cubes in butter or bacon fat. Put browned pork in Crock-Pot with all other ingredients. Cook on low for 8-9 hours. Serve topped with avocado, sour cream and/or shredded cheese. This is very mild, so if you want some spice, add some hot sauce, or a diced Jalapeno

Make chili, adding cubed and shredded cooked pork at the end.

I would throw them in a wok, add some lard, diced peppers, mushrooms, tomatoes, zucchin, a bit of black olives, some spices and done. Quick, easy, delicious and 100% primal

I recently used some leftover pork shoulder to make sort of a shepherd's pie... chopped it up, mixed with veggies and seasoning and a bit of tomato sauce, and topped it with pureed cauliflower.

Thanks! I went this route - managed to scrape up some summer squash, mushrooms, green beans, garlic, black olives and spices and throw it all in the wok.

Thanks for the suggestions everyone, I was drawing a total blank!
