  • White fish curry

    Here's a simple fish recipe I have been using for a few years even before I went Primal. We had it last night over cauliflower rice with a BAS.
    This is enough for 6 people so reduce quantities down if needed.

    3 Tbs oil/ghee
    2 medium onions chopped
    4 garlic cloves crushed
    1 inch piece of fresh ginger chopped
    6 green chillis (or substitute chilli powder depending how hot you like)
    1 tsp turmeric
    2 tsp ground coriander
    1/4 tsp black pepper
    3 cups coconut milk or cream
    2lbs cod steaks or any type of firm fish cut into chunks
    1 tsp salt
    2 Tbs or more lemon juice
    1 tsp sugar (you can omit this if you want)
    fresh chopped coriander leaves (cilantro)
    Heat the oil in a saucepan or deep frying pan. When hot add onion and fry stirring occasionally until they are golden brown. Add garlic, ginger and chillis and fry for 3 mins. Add rest of spices and pepper and fry for 2 mins. Pour in coconut milk and stir well add the fish and salt, bring to boil and then simmer for 10- 20 mins until fish cooked and flakes easily.
    Remove from heat and stir in lemon juice and sugar if using. Sprinkle with chopped cilantro.

    I hope that some of you get to try this recipe and enjoy it. I had bought some Tarakihi last night and didn't know what to do with it then decided at last minute that I fancied something spicy. You can play around with amounts of ginger and garlic too. You could probably get away with less coconut milk/cream too but it is yummy.
