What does low heat, medium heat and high heat actually mean?

  • What does low heat, medium heat and high heat actually mean?

    What do these heat levels mean? (degree wise).
    For example, medium heat is 350 degrees Fahrenheit. (Just an example, not saying it's right).

    My guess for the oven would be that low heat is 275, medium is 350 and high is 425.
    For a pan low would be a double-boiler (water boiling temp) medium would be sizzling oil, and high would be smoking.

      I did a sirloin roast 15 minutes @ 550 (the highest my oven will go) and 3 more hours @ 175. Smoked the kitchen up but it came out like a deli roast, black ring 3/8" and medium rare the rest of the way through. I'd call that high and low and 325 a medium oven. With more context the answer might differ.
