          A move in the right direction! If I had X amount of dollars I would love to open up a strictly Paleo cafe/eatery in NYC.

            I'm sure one is bound to open very soon. Also chances are it will fail in some way, because everybody has their own opinion on what's Paleo and what's not heh. I have past restaurant experience and a Business degree, let's do iiiittt ... you gather the money, the know-how, the location, the investors, figure out financials, come up with a name/theme, staff the joint... and leave the rest to me.

              90% of the customers to a strictly paleo restaurant will be ignorant of what paleo is and cause huge scenes when they realize they can't get bread or fried things. And then no more restaurant.

                        For many, the experience of steak at a restaurant is ruined without garlic bread. Veggies? No one cares about veggies when they go out to eat.

                          Pshaw, I do! I love me a steak house. I always get ribs (or steak) & salad, and ask for extra steamed veggies instead of a roll or potato. I was this way even before discovering PB
                          Favorite thing at Texas Roadhouse besides ribs: their chicken breast covered with cheese, onions, and mushrooms. Yum!

                            I think there would have to be something gimmicky about it, to draw people in and help them forget about their fried foods. Maybe there's a giant caveman-esque fire pit in the middle of the restaurant where they cook your steaks and grill your veggies in front of you.

                              I think if you make it clear up front there is no grain on the premises, that gives them time to get out before they get disappointed. Personally, I love it when restaurants take the time to make good veggie dishes. Most of them throw them on the plate as an afterthought.
