    i've heard that from people, but my own trial and error at home hasn't shown much of a difference between that or using the corner of a pan/bowl/counter.

      You can also use a butter knife or the handle part of a fork/spoon to gently crack it from the top.
      Everything in moderation, including moderation.

          LOL, I freak out when I see someone cracking an egg on the edge of something. I've always cracked on the countertop itself.

            I raise my own chickens who wander around the yard eating bugs and plants. They're pets, they have names, and they're extremely happy. Hence, their eggs are the most delicious ever. The shells are so hard and thick that I need a sledgehammer. Well, I exaggerate, but they're NOT easy to crack. Now, that's a good egg!

              Oh, most definitely. free-range eggs have much harder shells that factory chicken eggs do (those poor chickens).

                I strongly suspect that my counter-tops are not as clean as the edges of my bowls. (Lots of grout that's not even close to surface-level with the tiles makes it hard to wipe off.) I'll stick to cracking on the bowl. I suppose I could do it on a plate, but that's another dish to wash.

                  I have my eggs resting on a napkin or paper towel by the heating pan until I'm ready for them. I crack them on the paper (that's on the counter top) and any seepage that comes from the crack goes on the paper. Fold up the paper around the egg shells and toss it in the trash.

                    I prefer the hard surface crack myself (might have been an Alton Brown thing I picked up years ago). My fried eggs have far less 'broken' yolks and if I ever have a shell piece fall into the bowl/pan usually it is fairly large rather then the teeny annoying bits.

                              No when I shell a hardboiled egg I get it cold first then will crack and roll on a counter and then use a spoon to remove it from the shell.
