  • reasonable price for 1/2 or 1/4 beef?

    Local farmer has the following offering for grass fed and finished beef:

    The price of a whole, half, and quarter is $6/ pound
    based on the hanging weight of the animal. That price includes cut and wrap and
    delivery.

    For 1/4 animal, he figures 100 pounds with mix of cuts from fore and aft and ground also. How does this price jive with what you are paying?

    I am starting to look into local GF beef as well. Here is the pricing I got from one farm:

    Our beef is all grass fed and finished with no use of hormones or antibiotics. A quarter beef averages 150 lbs of hanging weight at $3.50/lb. Of course Mother Nature doesn't measure out cows according to our measurements, so that can vary considerably depending on the individual animal. All our beef is sold by hanging weight in accordance with GA law, but that can be a bit confusing if you've never bought beef this way. From the above mentioned animal, you can expect about 75lbs of cut, wrapped, labeled and frozen beef which will have cost you no more than $7/lb.

    You can expect to receive the following in a standard share of beef.
    30 to 40% ground beef (one and two pound packages)
    1/4 of all the roasts we cut (averaging 3lbs each)
    1/4 of all rib and New York strip steaks (averaging 1 inch thick)
    1/4 of all filet (averaging 1.5 inches thick)
    1/4 of all sirloin
    1/4 of all round steak
    1/4 of all cubed steak
    organs and bones are optionally available if you request them at the time you reserve your share

      Thanks! Great, helpful information. Looks like wide variation in pricing. I am in Alaska so the pickings are slimmer and operating costs likely higher than GA.

        For here, that's expensive. Most sellers here range from $2.50/lb for the basics, to $4/lb for what you're getting.

          $5.50 for all cuts -- this includes delivery.

          another local place is $6.50 -- you pick up.

            I get mine from polyface farms (Joel Salatin's stuff) and I paid $4.25/lb for the cheapest package (mostly roasts, some steaks, some bones and lots of ground) but he has other packages that go up to like $6/lb iirc for mostly boneless steaks. WHich is a HUGE savings over the $15/lb his steaks go for at the local butcher.

              I just ordered 1/4 of local grass fed black angus beef. Same price for 1/4 or 1/2, is $3.89 per lb (hanging weight), cut, vaccuum sealed, frozen and delivered to my door. I'll be getting soup bones and organs thrown in for free and I've asked for suet to make tallow as well.

                  Thanks for the input and data points. I will check out shipping costs to AK as manby of the sources referenced are 1/2 price of what I can get here. I will probably end up on the horns of he usual Alaskan dilemma - buy local and spend more OR mail order and spend less. We'll see.

                    I'd love to hear from anyone in the UK that had bought a 1/4 or a 1/2, for a reasonable price and with delivery.

                      In Vermont, I paid $2.90/lb hanging weight for my 1/4 beef. That worked out to $4.40/lb for the packaged meat. I got a lot of ground beef and a bunch of steaks, roasts, and ribs. I also got heart and liver for free, but they have been in my freezer all year because I'm scared to do anything with them.

                        We're just starting to look into this as well - this is great info.

                        A followup question is what kind of freezer size do you need for this? I was thinking of maybe 1/4 cow and 1/2 pig. Would a 7 cu ft be adequate, or is that too small?

                              It depends on the weight of the animals. There's a pretty wide range of size in cows and pig. I've heard that you need one cubic foot of space for 35-40 lbs of frozen meat.
