  • Coconut Milk is Not Primal

    Tonight I had the brilliant ambition to make my own coconut milk. I quickly came to the conclusion that coconut milk is not primal! Unless Mrs. Grok sat there all day bashing the @#% nut over a rock just to get 1/2 a cup of liquid out, and then thought "Huh, I wonder what I can do with this meat", I can't see anyone spending so much time on it. It took me well over an hour just to get the meat out of 1 coconut and get the skin off. *Head desk*
    Grok wouldn't have wasted so much energy chasing a stag. I will hunt & forage for the pre-processed stuff!

      honestly, when you know how to do it, it's easy. i was at a coconut grove in africa, and those people literally used a sharp rock and it was just "shuck, shuck, shuck, and had a way to crack it at just the right point where it came right open, and you had this amazing stuff, and you just reached in (after drinking the liquid or pouring it into a bowl) and scooped out the meat with your fingers. they would also use spoons. and then they could use the shells to carry water or hold other things (once those shells dried out).

      i would watch women sitting and processing coconuts and do like 1 or 2 a minute.

      takes some practice, i would say.

        Tell it to my bleeding fingers, LOL. No spoon was strong enough to penetrate the meat. I had to use a very sharp paring knife to separate it, then a potato peeler to get the brown peel off. I'll spring for the canned stuff.

          the thin brown stuff is fine to eat, but not the thick brown stuff.

          you really want to look for "young coconut" or one with the green outter husk still on it, otherwise it's too dried out to easily manage.

          honestly, it's tough to do the dried ones, and it's easiest to use a saw. and by that i mean like one of those little dremmel things that you can carve the top off of, then poor the milk out, and then, you need to saw it into little qarters, and eventually, the outter shell will pop off -- with the use of a flat head screwdriver.

          but fresh from the tree, it's much easier.

            My mum back in India makes CM the traditional way. She can afford to because she has all the necessary gadgets and we get fresh coconut from our farm. I rely on Thai Kitchen Or Native Forest

                I think it took you this long because you are a "coconut virgin" :-) Everything from the tree and the fruit has a use and I am sure that Grok & friends didin't care how long it took them because of all the benefits they stood to reap. Practise makes perfect - go on, do it again - you know you want to...

                  If you tried bow hunting, or spearing fish in a river, you'd say it wasn't primal either because you wouldn't catch anything. Survival takes skill practice and knowledge. Sorry to be so mean, but coconut products are definitely primal.

                      Erh, I just cracked two open today and it took me less than two minutes for both. Of the three eyes on top one of them is soft. Puncture it and drain the liquid. Then use a sharp, heavy knife *) and crack open the shell in two halves. The meat is best separated from the shell by warming up the shell and then the meat parts easily from the shell.

                        I didn't think they were that hard to crack, my two year old and four year old each broke one with a hammer. We did drill a couple holes to drain the water out first. Then I'd just use my hands to break the shell into smaller pieces, score the meat, and pry it out with a table knife. All the blending is a bit of work and takes time, but I got 3 quarts of milk out of two coconuts, and it's 100 times tastier than the store bought stuff. We enjoyed drinking it fresh so much I'm ordering 10 next time. From Azure Standard they're only $1.55 and they're twice the size of the Walmart ones.

                          I tasted the stuff I made last night. I don't know if I messed it up or what, but Thai Kitchen tastes way better than what I made. There is only 1/4 inch of the thick creamy stuff on top (I have it in a clear container) and the rest looks like coconut water. It was bitter and blech.

                          The original post was meant teasingly. Of course I'm still going to continue consuming coconut products, I just don't think I'll go through the hassle of getting it straight from the overgrown acorn.

                            How did you make it? I blend the heck out of it and then squeeze the heck out of it. The first time through was super rich and thick, the 2nd time thru using the leftover fiber and more water was not as rich but very sweet, the third time thru was more watery so I just used it for cooking and in shakes. Then I used the leftover fiber with some almond flour to make some heavenly cookies.
