  • Korean Dried Pumpkin

Picked up from a local Korean Gocery Store this bag of dried round "chips" of pumpkin. As the only listed ingredient is pumpkin, I'm guessing it was freeze-dried, which makes this article kinda interesting:

"We extracted carotenoids from [freeze-dried] pumpkin by liquid–liquid extraction and by supercritical fluid extraction. We measured carotenoids by reversed-phase chromatography with diode array detection. The major carotenoid in pumpkin (>80%) is β-carotene, with lesser amounts of lutein, lycopene, α-carotene and cis-β-carotene. Pumpkin is a rich source of β-carotene and might be useful for preventing Vitamin A deficiency

Note: it has an interesting taste and funky smell (like dried asian mushrooms). Crunchy, then becomes chewy. Considering how pricey they were, don't think I would get them again.
