I plan to make a whole chicken in a few days, and I'd like to save the carcass to make stock. The problem is, I don't have a crockpot (I'm looking to get one, hopefully next time I make chicken after this, I'll have it), so how can I make it? I do however have a pressure cooker, and just about every size pot you can imagine. What's the best way to go about this? And while I'm on the topic, how long after I clean the meat off the carcass should I wait to start making the stock?
