  • Spinach Salad

    I can't wait for lunch today. I plan on a large spinach salad (organic/baby spinach) with pecans, dried cranberries, red onion, a little feta cheese along with some balsamic and EVOO. Normally, I don't have the time to put it together so will really enjoy this.

    I am not the most original guy in the world so I pose this question to the members here:

    What do you top your spinach salads with?

    No meat?

    I have to cook my spinach, so cooked into it is usually asparagus, bell pepper, pine nuts/ pecans/ walnuts, garlic, onion, and skirt steak. Cooked in toasted sesame oil, I use a eastern ginger spice blend and sriracha; cooked in lard, I use oregano, basil, more garlic, parsley, and red pepper flakes. With the Italian version, I put some mozzarella and Parmesan in there and let melt before serving.
    Life is not a journey to the grave with the intention of arriving safely in a pretty and well preserved body, but rather to skid in broadside, thoroughly used up, totally worn out, steak in one hand, chocolate in the other, yelling "Holy F***, What a Ride!"

      My two favorites (I find standard lunch salads easy to manage)
      Spinach with red onion, mushrooms, grilled steak, grape tomatoes, fresh oregano, feta if you feel like it, herbed oil and vinegar
      Spinach with grilled chicken, red pepper avocado and salsa

            Spinach with avocado, walnuts, and salmon. YUM! I think I'll have that for lunch today.

              A Whey Protein Shake will do the job today. I usually like the meat on the side with my salad. I like your toasted sesame with ginger spice and sriracha idea. Definitely will try...sounds awesome.

                Last Minute Substitutions

                Subbed goat cheese (lower sodium) for feta and added some avocado slices. I hadn't had this salad for a few weeks and this really hit the spot especially after skipping breakfast (IFing)

                  For myself. Big Salad with Kale, Romaine, Sliced yellow Bell Peppers from my garden, Celery, Sliced apple, almonds, can of tuna and EVOO to top it all off. I still have about a month before my squash and Zuchinni are ready but when they are we're talking about some good eating.
                  Today is a new day. You will get out of it just what you put into it. If you have made mistakes, there is always another chance for you.                       I just had a twist on the Bacon Avocado Egg Salad, I did all of those, smooshed them slightly together put that over a bed of mixed greens with cherry tomatoes, with the leftover bacon drippings, I added balsamic vinegar and pepper and let it reduce slightly till thickened a bit. Lots of cracked pepper and pour over the whole thing and eat..... practically licked the plate clean. SO GOOD.
